Congee Recipe
Congee for healing the gut
Congee (kahn-jee) is known for support of the gastrointestinal tract as it is easy to digest and soothes the mucosal lining. It is an especially useful addition for patients with upset stomach or gastritis (but should not take the place of medical treatment). It can also be used when fighting the common cold as it is served warm and nourishes without any difficulty digesting.
Jasmine or basmati are the best type of rice, but any unprocessed white rice will do (no "minute" rice products).
Ingredients:

Rice

Chicken broth
-
Butter
-
Salt
Optional ingredients:

Fresh ginger
-
Green onion
-
Chicken
Directions:

Add 1 part rice to 9 parts broth

Add other ingredients and bring to boil

Reduce and simmer for 1hr until rice is over cooked and mushy like porridge.

Add butter and salt to taste

Serve hot
-
Consume as needed until symptoms improve
Aside from the rice and the broth, all other ingredients are optional. Ginger is the most important ingredient for those with gastrointestinal complaints.
